Healthy eating is easy in the summertime because you can load up on produce that is fresh and full of flavor! The last thing I want when temperatures rise is a piping hot meal, so salads are a summer staple in our household. But don’t think I’m serving up any boring old lettuce, this salad is healthy but full of flavor and protein so it will for sure leave you feeling full and satisfied!

My Go-To Summer Salad Ingredients – Serves 3-4 people
-1 Avacado
-2 ears of corn
-1/4 cup chopped cucumber
-1/4 of crumbled blue cheese
-2 hard-boiled eggs – sliced in half
Salad Instructions:
Marinate your chicken skewers in a bag with a drizzle of the salad dressing. Put in the fridge for an hour or so. Take your chicken skewers to the grill and grill until fully cooked. While your skewers are grilling, you can make your salad! Wash your lettuce and toss into a big bowl. Add your cherry tomatoes (you can slice in half or leave them whole), diced avocado, corn (chopped off the cob), blue cheese crumbles, sliced almonds and finish with the sliced eggs lined up around the edge of the bowl. Sprinkle basil and add a drizzle of salad dressing and then serve in big bowls!
Balsamic Salad Dressing Instructions:
Follow the instructions on the Good Seasoning package to make your dressing but add in a teaspoon of mustard and a squeeze of lemon for an added freshness!
