Cauliflower has been all the rage lately. It’s popping up in all your favorite dishes and snacks. But why? Since the Gluten-Free diet is on the rise, people have been looking for alternatives to eating flour-based foods and cauliflower has stepped right up! Being gluten-free myself, due to thyroid issues, I’ve been on a constant search to find substitutes that actually taste good. There are ton of products out there the promise to taste just like the real thing but in actuality, they taste more like cardboard than anything else. So in my hunt, I’ve come up with some go-to gluten-free, cauliflower full dishes that won’t even have you missing the gluten. I promise!

Cauliflower Fried Rice
Ingredients:
1/2 cup of frozen peas and carrots
1 tablespoon of minced garlic
1/4 cup of coconut aminos
1/4 cup diced yellow onion
2 eggs
1/4 cup sliced green onion
Instructions:
Empty bag of frozen cauliflower rice in a non-stick pan with a tablespoon of olive oil. Stir to break up the frozen chunks. Add in diced onion and garlic and stir fo a few more minutes. Add in frozen peas and carrots and keep stirring together. While your rice is cooking, in a separate pan cook the 2 chicken breasts that are cut up into cubes. Season with salt, pepper and coconut aminos (a great way to eliminate soy which has gluten in it!) Once the chicken is cooked, add to rice pan and continue to cook. Create an empty spack in the center of the pan and crack 2 eggs. Scramble for a few seconds and then combine with the rest of the dish. Add more coconut aminos to the dish to add that soy flavor and a drizzle of sriracha if you like a bit of spice. Once the dish is fully cooked, serve and garnish with more sriracha and sliced green onions. Enjoy!
Caulipower Sundried Tomato & Mozzeralla Pizza
Ingredients:
Oregano or pizza spices
Fresh Basil for garnish
Instructions:
Take Caulipower pizza crust out of the box and out of the wrapper. Discard the cardboard and be sure to preheat your oven to 425. While your oven is preheating, top your pizza with the desired amount of sauce, cheese and then top with sundried tomatoes and a sprinkle of oregano. Pop in the oven for 12-14 minutes or until cheese is bubbling. Take the pizza out to rest for a few minutes before topping with fresh basil and serving. Pairs nicely with a bold red wine!
